It’s all about “earning your booze” – just ask The Apartment Bartender, Elliott Clark, who has amassed a following of over 35,000 fans by creating, mixing and photographing delicious cocktail recipes for a wide range of taste buds on Instagram for the last two years (and counting!). “It’s become a creative outlet for me, alongside my love for photography. ” explains Clark.
“I see a big trend in the spirits industry moving towards healthier alternatives for people to enjoy. There are a lot of people who enjoy a good cocktail, but don’t want the calories associated with it. CORE Organic is great because it allows you to mix with different spirits without having to add different syrups or liqueurs. It’s pretty flavorful as is so you don’t have to add too much to make a good cocktail with it. ” explains Clark.

The Core Watermelon Sipper
- 2 oz Reposado Tequila (or Mezcal)
- 1 oz Watermelon Lemonade Core Organic
- 1/2 oz fresh lemon juice
- Dash of Angostura bitters
- Dash of Peychaud’s bitters
Combine all ingredients into a cocktail shaker. Add ice, and shake until chilled. Strain into a rocks glass over ice, and garnish with a lemon peel twist.

Blueberry Coconut Core Mojito
- 2 oz light rum
- 1.5 oz Coconut Core Organic
- 1/2 oz lime juice
- 3-5 mint leaves
- 6-8 blueberries
- Soda water
- Garnish: speared blueberries, mint sprigs
In a cocktail shaker, combine all ingredients except soda water. Gently muddle the ingredients. Add ice and shake to chill the cocktail. Strain the cocktail through a fine mesh strainer into a highball glass over fresh ice (the fine mesh strainer catches the mint and blueberries solids). Top with soda water and garnish with speared blueberries and mint sprigs.

Bourbon Core Peach Mango Cooler
- 2 oz Bourbon
- 3 oz Core Organic Peach Mango
- 1/2 oz fresh lemon juice
- 2-3 dashes of Angostura bitters
- Garnish: mint sprigs
Combine all ingredients into a cocktail shaker. Add ice, and shake until chilled. Strain into a collins glass over ice, and garnish with a couple sprigs of mint.
